New Delhi-born chef Suvir Saran of the Flatiron’s Dévi conducts a virtual journey through the world’s spice markets. Students will sample spices and learn how to buy, store, and use them. They will explore exotic flavors and trends, experiment with pairings, and learn cultural and historical references. The session includes an intoxicating lunch incorporating the day’s delicious lessons. Organized by The James Beard Foundation and New York University’s School of Continuing and Professional Studies.
